The “colorful” chemistry of nonenzymatic browning

Abstract

Important chromogenic reactions have been resolved from the puzzling network of nonenzymatic browning mechanisms by application of the Color Dilution Analysis (CDA) and [13C]-labeling experiments on thermally heated carbohydrate/amino acid solutions. This paper reports on the identification of novel chromophores and gives a brief survey on important chromogenic reaction routes of pentoses elucidated in recent years.
