Potential of lactic acid bacteria to reduce the growth of Fusarium culmorum in the malting process

Abstract

25 microorganisms were used for tested for their potential to reduce growth of toxigenic and gushing-active Fusarium culmorum strains during the malting process. Twelve isolates were found to substantially decrease the growth of F. culmorum under the conditions applied.
