Abstract
Processing food in a kitchen environment is a highly human driven process. There are not many automated processing machines available that are able to perform the whole food processing. To face the changing market due to a customer-individual (mass customized) food-product automated solutions are necessary. This article presents a topic that has to be taken into account when thinking about fully automated food processing. The approach of a quality-based production control comes up when thinking about scheduling of perishable goods.
