Abstract

97 bulls of the endangered Bavarian breeds Allgäuer Braunvieh (original), Murnau-Werdenfelser and Pinzgauer were compared to Fleckvieh (Simmental) in a fattening trial with corn silage and concentrate. The bulls were slaughtered at 500 days of age. In daily gain Pinzgauer topped Fleckvieh (1170 g) by 10 g while Murnau-Werdenielser were 69 g and Braunvien 130 g behind. In killing out percentage Pinzgauer (57,3%) were 1,2-1,8% below the other breeds. Therefore in net gain they (688 g) were second after Fleckvieh (706 g). Murnau-Werdenfelser had the best slaughter conformation (3,61 EUROP) followed by Fleckvieh (3,45), Braunvieh and Pinzgauer. Carcass composition was estimated by regression equations which were derivea from extensive dissection data. Pinzgauer were in fourth position for meat, and in first for fat and bone percentage. Braunvieh had the highest muscle content (71,5 %) and least fat (10,0 %), and MurnauWerdenfelser least bone + tendons (17,7 %). The proportion of round-muscles was highest in Fleckvieh and Braunvieh carcasses while Murnau-Werdenfelser and Pinzgauer had the highest proportion of back-muscles (sirloin and fillet).
