Abstract
Ethanol (CAS: 64-17-5) is a high-volume solvent, chemical manufacturing intermediate, and common ingredient in many consumer products including alcoholic beverages. Chronic overexposure to ethanol can result in hepatotoxicity, neurotoxicity, and developmental toxicity. Ethanol is metabolized very efficiently by alcohol dehydrogenase to acetaldehyde and then by aldehyde dehydrogenase to acetate. There are polymorphic variants of the alcohol dehydrogenase and aldehyde dehydrogenase.
