Release of arsenic from kieselguhr used as filtration aid in the food industry

Abstract

Kieselguhr, also known as diatomaceous earth, is used as filter aid in the food industry for clarification of juice, wine, beer, and for extending of shelf life. Kieselguhr occurs naturally in some countries like the USA, Germany, Denmark, France, Mexico, Canada, and Czech Republic. For filtration purposes, kieselguhr is used in different particle size ranges, which are classified as fine, medium, and coarse. Arsenic has been found to be present in some juices and in some beers. Our investigations revealed that kieselguhr may be a significant source of arsenic in beer. The degree of extraction of arsenic from kieselguhr during filtration depends on the type of beer and on the filtration conditions.
