Abstract
In model experiments it is demonstrated by means of a new method that rennet coagulation of different casein solutions shows differences in the size distribution of particles ranging between 2-6 μm diameter. Structural changes of the casein micelles can be detected by this method earlier than by the visual determination of the coagulation. The particles have been counted electronically by the Coulter Counter in certain time intervals after rennin addition.
